I saw a picture of this on Pinterest and couldn’t resist (Amen for Pinterest food pictures!). I took the original recipe and made it into a chicken meal that suits our family a better.
4 chicken breasts (cut into quarters)
4 chicken thighs (cut into halves)
**Use whatever part of the chicken you like to eat, just make sure they are cut in proportion to each other.
2 tbsp olive oil
2 tbsp minced garlic
2 tbsp dry oregano
Sprinkle of pepper
2 tbsp red wine vinegar
In a bowl, combine of all the above ingredients. Mix thoroughly. Spread chicken out on a lightly sprayed baking pan. Bake at 350F(180C) for 30-40 minutes.

3 garlic cloves, chopped
1 red onion, sliced
10 small-medium tomatoes (quartered)
1 cup black olives (halved)
Handful of baby spinach leaves
1/2 cup crumbled feta
On low, heat olive oil in a pan. Add garlic and saute for 30 seconds. Add red onion and stir for 1 minute. Add tomatoes and olives and stir for another 3-4 minutes. Remove from heat and toss in spinach. Stir until combined.
Top chicken with Greek topping and crumble feta on top. I served this with steamed kale and green beans. My boys also had rice noodles with their meals. Yummy!
