The Mexican seasoning you buy in the grocery store usually lists “sugar” as its first or second ingredient. Here’s a recipe for mexican seasoning with no sugar or salt and the ingredients are probably already in your cupboard.
1 tsp ground chillies (or chili powder)
1 tsp paprika
¼ tsp cayenne
¼ tsp dry oregano
1 tsp ground coriander OR cumin
Mix. Done! I often double or triple this recipe and store the rest in the pantry for future Mexican meals.
Everybody likes their Mexican meal a little differently. If you need an idea, here’s what I usually use for toppings:
1 tbs olive oil
1 lb ground turkey
½ head of iceburg lettuce
1 red pepper
1 yellow pepper
1 tomato, diced
1 avocado, sliced
handful of cilantro leaves
1 can of black beans (rinsed)
2 cups of cheese (your choice, I use edam because its lower in fat than most cheese)
sour cream (I use light sour cream)
Salsa (your choice)
Saute ground turkey until cooked. Sprinkle with desired amount of Mexican seasoning. Set aside. Saute onions and peppers. Sprinkle with desired amount of Mexican seasoning.
Deseed and dice tomato. Slice avocado. Shred lettuce. Chop cilantro leaves. Set aside.
Rinse and drain black beans. Warm in the microwave or serve cold.
If your watching carbs, this is a good idea. Layer: iceburg lettuce, seasoned turkey, sautéed vegetables, tomato, avocado, black beans, cheese. Sprinkle cilantro. Add desired sour cream and salsa. Mix. Eat!
